With spring here and summer just around the corner I have to remember to make ice cubes on a regular basis !!! I do not have one of these fancy American refrigerators, which can supply you with ice cubes in no time. So I have to remember to fill ice cubes formes and/or ice cubes plastic bags with water, freeze them, empty them and make a new portion.
Summer Strawberry is one of my favourite summer cocktails. You could perhaps even call it a fluid summer dessert with strawberries ? And it an easy way of getting two of your required six servings of your daily fruit and vegetables ! Addition of tequila is not a requirement, but it makes life more funny :-)
Summer Strawberry - one serving
- 200-250 g rinsed strawberries - I prefer fresh
- 2-6 cl tequila
- lemon juice
- mint leaves
- pinch of freshly grounded pepper
- ice cubes
- Fill a blender with all the ingredients
- Blend until homogeneous
- Served in a high ball glass with a straw

Uhmm, jordbær og tequila! Nogle gange er jeg træt af at jeg ikke drikker alkohol, men jeg har jo selv valgt det :-)
